I don’t like spending a lot of time in the kitchen, but sometimes we need a non-sweet treat. This avocado mousse recipe will suit all health tribes…Paleo, Keto and Vegan and it’s super simple! This dessert could be a healthy breakfast with the nutrient-rich avocado, collagen peptides and coconut milk – the perfect combination of fat, protein and carbs to balance your blood sugar naturally!

Ingredients

1-2 large ripe avocados
1/4 cup raw cacao powder
1/4 cup canned coconut milk
1 scoop collagen peptides
1 teaspoon vanilla extract
1/2-1 teaspoon stevia or monkfruit (optional)
Optional add-ins: chia seeds, raw unshelled hempseeds, MCT oil, coconut oil, banana

Instructions

  1. Puree the avocado until smooth.
  2. Mix together cacao powder, collagen peptides, and coconut milk until combined and add the avocado.
  3. Stir in the vanilla and other ingredients (if using) and mix well.
  4. Divide into small bowls and store in the fridge until ready to enjoy.
