Ghee Roasted Baby Potatoes

This potatoes are absolutely simple to make. The magic comes in at the end when you toss them with fresh parsley and ghee, also known as clarified butter. The ghee gives a really clean, and buttery taste, and is great for anyone who has difficulty digesting lactose!

Further Food Nutritionist Commentary:

​Potatoes are often overlooked as a source of good nutrition, when in fact they are rich in vitamin C, have more potassium than bananas, spinach or broccoli, and are a surprising source of protein -- one medium potato has 3 grams. Leaving the skin on provides fiber, and lessens the increase of blood sugar levels following a meal.

Although ghee is a form of butter-derived fat, some of its fat composition is omega-3 and omega-6, and the flavor is so rich that only a small amount is needed to be satisfying. Furthermore, it's a source of fat-soluble vitamins A, D, E and K, which require a small amount of fat for the body to absorb and utilize them.

Notes: To cut down on added calories and fat, decrease the amounts of both the olive oil and ghee from 1/4 cup to 2 Tbsp. The milk solids in ghee are skimmed off in the clarifying process, so it may be tolerable for those who are lactose intolerant. However, there can be no guarantee that all of the milk solids have been removed, and is therefore best avoided if you have a dairy/milk allergy.

Ghee Roasted Baby Potatoes

Ingredients

30 baby potatoes
10 pearl onions
1/4 cup olive oil
1 bunch parsley
1/4 cup ghee
Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F.
  2. Toss potatoes and onions together with olive oil.
  3. Roast them for 30-40 minutes, or until golden.
  4. While hot, mix in the ghee and parsley.
  5. Salt and pepper to taste! Serve!
