The keto diet is a very popular nutritional approach which involves manipulating macronutrients to a higher-fat, moderate-protein, low-carbohydrate diet. Benefits can be increased satiety and weight loss if well-formulated under the guidance of a nutritionist or an Integrative Nutrition Health Coach like myself with nutrition expertise. Many of my health coaching clients and groups are asking for more keto recipes and desserts are always a favorite. My mantra is that “Being Healthy Doesn’t Have to Be Hard,” so when I come up with recipes, they are super simple. This Keto Cheesecake Fat Bombs recipe isn’t for everyone since many of my clients are dairy-free, but if you tolerate dairy in moderation, these are a delicious, decadent, bite-size low-carb treat!

Keto Cheesecake Fat Bombs

  • Prep Time: 10 minutes
  • Cook Time: 2 hours, or until solid
  • Servings: 12

Ingredients

4 ounces of cream cheese (room temperature, softened)
1/4 cup natural raw sunflower butter (no sugar or other oils added) (Note: other raw creamy nut butter like cashew work well too)
2 scoops Furtherfood Vanilla Collagen Peptides
1/2 cup crushed unsweetened baking chocolate (optional), or you can coat with unsweetened raw cocoa or cacao powder, crushed pistachios or desiccated unsweetened coconut flakes

Instructions

  1. In a bowl, combine cream cheese, sunflower butter, collagen powder.
  2. Stir until well combined and smooth.
  3. Scoop golf-size portions of “dough” and form balls.
  4. If desired, coat balls in crushed unsweetened baking chocolate, cocoa or cacao powder, crushed pistachios or unsweetened desiccated coconut flakes.
