Lemon bars are a favorite dessert of mine because of their sweet-tart flavor profile and lower added sugars compared to other desserts. These are a good source of vitamin C and is a good dessert choice for those following a gluten-free diet!

Lemon Bars

  • Prep Time: 10 mins
  • Cook Time: 45 mins
  • Servings: 12

Ingredients

1 cup Earth Balance Vegan Butter (softened)

2 cups gluten-free flour mix
½ cup powdered sugar

4 eggs
1 ¾ cups granulated sugar
zest of 1 lemon
4 tablespoons gluten-free flour
¾ cup lemon juice (fresh)

Instructions

1. Heat oven to 350*F.
2. For Base- mix together butter, 2 cups flour, powdered sugar until incorporated.
3. Press evenly into a 9X13 inch pan. Bake until golden, about 25-30 minutes.
4. For Topping- beat eggs, sugar, zest, and 4 Tablespoons of flour, set aside.
5. When base is baked, add the lemon juice to sugar mixture and mix.
6. Pour mixture over the base and bake until golden, about 20 minutes.
7. Cool in refrigerator then cut.
8. Enjoy.
