Grain-free Lemon Pound Cake (Paleo)

I’ve been going through my Pinterest boards this week and trying to finally get around to making some of the temptations that I saved there. Like so many other pinners, sweet recipes are my favorite eye candy. What I pin, however, are all cleaned up treats that are gluten, grain and dairy-free.

Take this pound cake, for example. The recipe from Paleo Newbie fits all of those criteria and sweetened only by raw honey. While some grain-free cakes suffer in the texture department, this one is light, fluffy and not too fragile. By lining my pan with parchment I was able to easily remove and slice the loaf.

I served it up with a little vegan whipped cream for the kids and strawberries for everyone. Big hit and definitely one I’ll be making again.

A triple dose of coconut in the forms of flour, milk and oil impart a moist, fluffy texture and distinct flavor to this bright and cheery lemon pound cake. It's grain-free and gluten-free, lower in total fat, calories and sugar than most traditional recipes.

Notes: Per ounce "light" coconut milk has about 20 fewer calories than full-fat. Make an even swap and save 3 grams of fat, 2 grams of which are saturated.

Grain-free Lemon Pound Cake (Paleo)

  • Prep Time: 20 minutes
  • Cook Time: 35 minutes

Ingredients

1 1/2 cups almond flour
3 tablespoons coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
zest and juice of 2 lemons
2 teaspoons pure vanilla
3 eggs, whisked
1/3 cup coconut milk
1/3 cup raw honey
2 tablespoons melted coconut oil

Instructions

1. Preheat oven to 350 and line the bottom of a loaf pan with parchment paper.
2. Combine flours, baking soda and salt in the bowl of a stand mixer. In a separate bowl, mix remaining ingredients. Add wet mixture to flour mixture and mix until batter is smooth. Allow to sit for 10 minutes. Mix again.
3. Pour batter into prepared loaf pan, smoothing out top with a spatula. Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before removing from the pan and slicing.
