I’ve been going through my Pinterest boards this week and trying to finally get around to making some of the temptations that I saved there. Like so many other pinners, sweet recipes are my favorite eye candy. What I pin, however, are all cleaned up treats that are gluten, grain and dairy-free.
Take this pound cake, for example. The recipe from Paleo Newbie fits all of those criteria and sweetened only by raw honey. While some grain-free cakes suffer in the texture department, this one is light, fluffy and not too fragile. By lining my pan with parchment I was able to easily remove and slice the loaf.
I served it up with a little vegan whipped cream for the kids and strawberries for everyone. Big hit and definitely one I’ll be making again.
