I have a MAJOR sweet tooth but cannot handle indulging in traditional junk food. Instead, I enjoy whipping up decadent, indulgent recipes in the kitchen that make me feel like I am eating I shouldn’t be. I love creating recipes that remind me of my childhood and feel like comfort foods…. introducing these salted cacao chip protein cookies.

These cookies are great when you are wanting a nutritious treat. The chickpea flour is a great substitution if you are gluten-free, or even if you just want to get more protein into the recipe. Additionally, using coconut oil here is a good way of nixing butter and gaining healthy fats as well as its antimicrobial powers. Salted Cacao Chip Protein Cookies

Ingredients

1/2 cup of coconut oil, melted and cooled
1/3 cup coconut sugar
1 egg, at room temperature
1 teaspoon vanilla extract
1 1/4 cups chickpea flour
3/4 teaspoon baking soda
1/2 teaspoon salt
2 scoops of Further Food Collagen Peptides
1/4 cup cacao nibs
Coarse sea salt for sprinkling on top

Instructions

1. Preheat oven to 350 degrees.
2. Mix together the coconut oil, egg, vanilla extract and sugar in a large mixing bowl.
3. Mix chickpea flour, baking soda, salt, and collagen in a small bowl.
3. Slowly add dry ingredients to the wet ingredients & then fold in cacao nibs.
4. Spoon 12-15 balls on to a cookie sheet and spread slightly with your fingers. Sprinkle generously with sea salt on top if you desire.
