This week Further Food is pleased to spotlight Dr. Kellyann Petrucci, one of our health experts. After “hitting a wall” at age 40, she put on weight, was losing her hair and noticed a change in her complexion. Her hormones were out of whack and she was determined to take back control of her health by making some lifestyle changes that revitalized her body and mind. Dr. Kellyann is a board-certified naturopathic physician and a certified nutrition consultant.     Hi, I have been making and using bone broth for some time. I am 68, 5, 5 142 pounds, waist 31. I am retired and living in Cost Rica. A lot of grass fed beef, dairy and free range chicken in the rural area where I live. I saw a clip of an interview of you recently about liquid gold.

    I ‘m wondering if the stuff that coagulates on top after it cools is also collagen too! I thought it was excess fat so I was throwing it out. It sure looks like fat. I actually love the carrots and celery that remain and eat that. I had only been doing the broth on my fast days. I do 36 and 48 hour fast at at least once a month and 24 hour regular fasts two to three times a week. I love how they make me feel.

    My broth looks thicker than yours so I’m wondering what I am doing wrong.

    After slow cooking my broth for at least 12 -14 hours and it cool, I take out the bones and veggies and run the liquid through a strainer. I put it in jars to keep. I eat a keto type diet and love costa rican coffee. I’m pretty active for my age and have been called moderately athletic. I love my life but want to start drinking bone broth more. The clean up is kinda of messy and everything feels greasy but it’s worth it.

    Can you please let me know if I am discarding good collagen or what I am doing wrong? I hope you have the time to read this and respond. Please do not send me some automatic robotic response. I look forward to your answer. By the way how old are you? just curious.

    Is your plan safe for a diabetic type 1 1/2 on slow acting insulin 10 units once a day at bedtime? I need to lose 16 pounds and though I cheat and drink red wine I am low carb kinda paleo most days…
