This recipe looks great! Will definitely try. However, I don't appreciate your commentary about Chinese food. "Most Chinese foods these days are deep-fried and drenched in fattening and sodium-packed sauces" simply isn't true. It might be in Chinese-American fusion foods, but traditional Chinese food is not deep-fried or drenched in sauces. Please don't generalize about an entire cuisine, especially one that is further broken up by region.

I used normal AP flour and added raspberries as a topping. Also swapped the 3 eggs out for a cup of apple sauce. DELICIOUS!

Adding matcha is so smart. I've been using vanilla extract and the extra matcha gives it such a flavor boost! Consider adding red beans (cooked) for delicious treat.

That's such a good idea! You can coat the blueberries with flour and gently fold them into the batter before pouring the batter into baking pans.

Unsure about the coconut milk for sour cream because the consistency is different, but the other 2 should be fine. I would probably use more unsweetened apple sauce instead of egg beaters.

1 & 8 are huge for me! It's so easy to continue eating chips when you have the bag open in front of you. So important to keep healthy foods nearby instead of sugary and fatty foods. It's harder in shared spaces (dorms, apartments), but having fruits and granola are great ways to have easy, accessible and tasty snack foods!
