    I made this today and it was DELICIOUS! So simple, but the coconut milk really gives the pudding a thick, creamy texture. The vanilla was definitely my favorite touch though. I ended up eating mine on top of a smoothie bowl - it was definitely heavenly!

    I made this for dinner tonight...and I was amazed how easy and flavorful this dish turned out without complex or tons of ingredients! I've only tried cooking with coconut milk a couple times before, but I think it really was the key to this dish. The only thing I changed was adding a little bit of curry spice since I didn't have cumin or ginger on hand...still delicious and still a new fave!

    I made these the other night and they turned out absolutely delicious! Though it was difficult to get them cooked evenly due to the skinniness, I loved the contrasting crunchy and chewy textures. Thanks for a new use for my spiralizer!

    I just made this an open-faced burrito for dinner tonight - delicious! Love the idea of adding zoodles. I love zoodles, but get bored of eating them as stir frys,so this is a great addition to my menu. The only things I changed were using sliced squash and radishes instead of carrots and using daiya cheese for a gluten free option. Great recipe!

    I made this recipe yesterday and I was amazed at how creamy and flavorful it came out using only broth (versus a mushroom soup, like I've used before). I added some extra chopped veggies (squash and zucchini) and chicken, but I would definitely make this again!

    I made a batch of this bacon yesterday and used it to top my shepard's pie tonight - delicious! I love how caramelized the mushrooms turned out, not to mention how easy this recipe was to make. The only changes I made were turning up the heat to 375 F in the last 10 minutes and cooking for 10 minutes longer in order to get my (admittedly somewhat fat) mushrooms a little crispier.

    I just made these for dinner tonight - so glad I finally found a way to use the Nori wraps sitting inside my cabinet! I used brown rice, black beans, lots of roasted veggies, avocado and salmon - it was delicious! Love the twist of using a different wrap than the typical tortilla.

    Hi Megan. Spirulina is a "superfood" powder made of algae. I wrote a blog post a while abck all about spirulina's health benefits and ways to use it.     I whipped up this recipe last week and it was a big hit! The only changes I made was adding some avocado cream sauce and daiya cheese for some creamy-melty action after I popped my tortilla in the oven for 20ish minutes. Loved the idea of combining salmon, beans and veggies. Thanks for the great dinner inspiration!
