My Story

Dakota spent years working in nationally acclaimed restaurants like Zuni Cafe and Julia’s Kitchen, in Northern California, and The Kitchen, in Boulder, before opening Cafe Aion in Boulder’s historic The Hill neighborhood. Cafe Aion’s menu, rooted in the flavors of Spain, Portugal and North Africa, reflects Dakota’s deep respect for the integrity of the best ingredients, and his reverance for seasonality, craft and inspiration. A native of Maine with a degree in architecture from the University of Colorado, Dakota won the Food Network show Cutthroat Kitchen in 2014. When he is not in the kitchen or hanging out with his daughter, you can find Dakota either on skis in the backcountry or rock climbing in the beautiful Colorado wilderness.
