I thought I had tried everything. When I was first diagnosed, I simply replaced my convenience foods with gluten free equivalents, and although I felt better initially, a few months later I starting running into more problems. I became completely intolerant of dairy, eggs, other grains, legumes, nuts & seeds, and worst of all… cocoa! (A hormonal woman without chocolate is a scary thought). I was also struggling to digest red meat and heavier meals. My health really declined towards the end of last year just before my wedding, and I sadly felt the need to resign from my senior role at a company I had been working at for many years. Had it not been for a fantastic doctor suspecting Celiac Disease and putting me on a strict, gluten free diet, I would not have made it down the aisle. Now, my passion to help others who may also be suffering with Celiac Disease, Endometriosis, PCOS or infertility, or those who may simply wish to prevent such problems, drove me to set up my website, Healthy Happy Coeliac. There, I try to raise awareness of these conditions with the hope that I can offer support to others who may be suffering with the same issues.
