3-ingredient Banana Pancakes (Grain-free)

Craving pancakes, but without being able to use wheat flour, and not wanting to mess with other flours, I found a simple combination of bananas and eggs to satisfy my need. Plus the bananas provide sweetness so I can skip the syrup and takes these as a quick out-the-door breakfast too!

3-ingredient Banana Pancakes (Grain-free)

  • Prep Time: 5 mins
  • Cook Time: 5-10 mins
  • Servings: 1

Ingredients

1 Banana

1 Egg

⅛ teaspoon salt

1 tablespoon butter or coconut oil (divided)

optional: 1/2 teaspoon vanilla, 1/4 teaspoon cinnamon

Instructions

  1. Mash the banana in medium bowl.
  2. Whisk in egg, salt and optional vanilla and cinnamon till fairly smooth.
  3. Heat half of the butter/oil in skillet over medium heat.
  4. When bubbly, pour in pancake batter to size as desired (suggestion 2 tablespoons at a time).
  5. Let cook approximately 4 minutes, or when edges start to brown – don’t mess with it in the meantime!
  6. Flip and cook another 3-4 minutes
  7. Repeat steps 3-5 until all batter is cooked, adding more butter to skillet as needed to prevent sticking.

 

Suggested pairings:

Serve with butter or syrup or jam as desired

    I love these! So easy and soooo good. You don’t even have to measure anything!
    I thought they were going to be really banana-y, but the flavor is surprisingly pancake like after they get griddled up! I added vanilla and cinnamon to the second batch I made and it was heavenly!
