I absolutely love dark chocolate and let myself have it at least once per week as a treat. The key is just to make sure you’re choosing dairy-free, 80% or higher dark chocolate, that is organic and GMO-free. When it comes to sweeteners, opt for a natural choice (dates, stevia, etc) instead of white sugar and enjoy!

Chocolate contains two related alkaloid stimulants, theobromine and caffeine, in a ratio of about 10 to 1. Theobromine, unlike caffeine, does not stimulate the central nervous system-its effects are mainly diuretic. Chocolate is also rich in phehylethylamine, a naturally occurring compound that has effects similar to those of amphetamine. The original chocolate bean has significant amounts of vitamin E and B vitamins. Cocoa powder also supplies chromium, iron, magnesium, phosphorous and potassium.

Ingredients

1 cup dates, pitted
¼ cup raw cacao or unsweetened cocoa powder
1 tsp pure vanilla extract
⅛ tsp ground cinnamon
Pinch of salt

Instructions

  1.  Blend all ingredients in a high speed blender or food processor until it forms a smooth paste. Scrape the dough off of the sides one or two times to make sure everything is incorporated.
  2. Scoop out 1 tablespoon of the mixture and roll into balls. Place the balls on parchment in an air-tight container. Store in refrigerator overnight.
