5-Minute Kale Salad with Citrus

This simple salad was birthed after many long days away from my kitchen. Knowing that my body needed more leafy greens but my feet wanted to sit down and relax. This creation was born. It takes under five minutes to make (when greens are prepared and washed) and tastes like health in a bowl. Give this a try tonight and see how easy it can be to make a beautiful salad happen after a long day.

So glad you suggest using lemons and limes. These citrus are often times overlooked or just used for garnish, yet they should be considered all stars as they contain flavonoids and antioxidants, which can potentially neutralize free radicals and protect against heart disease and cancer. Also, flavonoids may improve blood flow through arteries, decreasing the ability of arteries to form blood clots and prevent oxidation of “bad” LDL cholesterol. These fruits are also high in folate, thiamin and vitamin C, which play a secondary protective role wound healing and holding blood vessels, tendons, ligaments and bone together. Not keen on lemons or limes? Opting for grapefruit, oranges or tangerines can provide similar benefits.

5-Minute Kale Salad with Citrus

Ingredients

2-3 large handfuls of kale or other leafy greens cut into thin ribbons
1 tablespoon lemon or lime zest (I usually use the whole fruit)
1 lime or lemon, juiced (or half of one if large)
drizzle of honey or agave
pinch of sea salt
fresh ground cracked pepper
Optional add-in’s: pumpkin seeds, sunflower seeds, walnuts, raisins and/or fresh berries

Instructions

1. In a large salad bowl or on a dinner plate place kale ribbons.

2. Using a zester, zest the lime or lemon over the greens.

3. Next, cut the lemon or lime in half and squeeze the fresh juice over the kale.

4. Gently massage the kale with your hands to breakdown the leaves and remove some bitterness for about a minute. (Note: It will reduce down in size.)

5. Drizzle with honey or agave across the top.

6. To finish add a sprinkle of sea salt and pepper to taste, along with any other desired toppings.
