5 Minute Raw Coconut Berry Tarts

These raw coconut tarts make a great dessert or snack! Almonds are known for being heart healthy and contributing to lower blood sugar and reduced blood pressure and bad cholesterol levels. The fiber and protein in almonds also helps satisfy and keep you fuller longer! Coconut yogurt is a great source of probiotics, fiber and calcium, making these tarts great for your gut health, digestion and building healthy bones!

5 Minute Raw Coconut Berry Tarts

  • Prep Time:5 minutes
  • Cook Time:1 hour
  • Servings: 6

Ingredients

Base:
1 cup of dates (soaked in hot water for a few minutes)
¾ cup of almonds
1 tablespoon cacao powder
3 tablespoons mulberries (optional)
Topping:
1/4 cup Coconut yogurt
Your favourite berries of choice

Instructions

  1. Prepare three tart moulds. Set aside.
  2. Into a food processor add your four base ingredients and pulse till the mixture begins to clump up.
  3. Form a ball with your mixture, and cut it into 3 even pieces.
  4. Place each third into the moulds and begin to press the mixture out, and make sure that you are pushing all the way up to the top of the moulds, and getting an even layer throughout.
  5. Once you have pressed the mixture into all three moulds you can place the moulds into the fridge for about an hour before adding yogurt, and berries to the centre!
