Apple Cinnamon Sweet Potato Pancakes (Dairy-Free, Gluten-Free, Paleo)

  • Prep Time:5 minutes + mashing potato 1 night in advance
  • Cook Time:10 minutes
  • Servings: 4-5 pancakes

Ingredients

1 mashed sweet potato
2 eggs
1 tablespoon cinnamon
pinch of sea salt
1 tablespoon pea protein milk
1 scoop Further Food Collagen Peptides
Optional toppings:
pure maple syrup

Instructions

  1. One night in advance, roast the sweet potato at 400 F for 30 minutes. Mash and set aside for tomorrow.
  2. On the day of – combine the mashed sweet potato, eggs, cinnamon, pinch of sea salt, pea protein milk and collagen peptides.
  3. Once combined, cook on skillet over medium heat about 3-5 minutes each side.
  4. Top with apple chunks, cinnamon, pure maple syrup, whatever your heart desires and enjoy!
