Asian Chicken Skewers with Bacon Wrapped Pineapple

This recipe was created because my husband LOVES bacon but rarely gets it, I wanted to surprise him with a meal that incorporated bacon but was still a healthy dinner. This is an Asian Chicken Skewer with Bacon Wrapped Pineapple. (husband approved!)

This recipe looks delicious and is an easy way to get veggies into your diet, add bacon to anything and it tastes good right and a little goes a long way as shown by this recipe! I love the high fiber, nutrient rich veggies in this dish. I would recommend if you want to go lower in fat to try using turkey bacon and if you are gluten free to use tamari instead of soy sauce to avoid gluten completely. Lastly if you are watching your sodium intake opt for low sodium soy sauce to knock that sodium in half.

Asian Chicken Skewers with Bacon Wrapped Pineapple

Ingredients

For the marinade:
1/2 cup organic soy sauce
1/8 cup honey
1 tablespoon mustard
1 teaspoon ground ginger
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper powder
1 pound of organic Chicken breast (cut into one-inch pieces)

 

 

For the skewers:

15 pineapple chunks
8 slices of bacon (cut in half)

1 large zucchini (thickly sliced)
5 large button mushrooms (cut into thirds)
1 bell pepper (thickly sliced)

Instructions

  1. Mix marinade ingredients together in a medium-size mixing bowl, add chicken. Set aside to marinate while you chop the veggies for skewers and prepare the rest of the meal.
  2. Wrap pineapple chunks in bacon and set aside.
  3. To prepare skewers, load them up in any pattern that works for you.
  4. Transfer skewers to a large baking sheet and pour remaining marinade over them.
  5. Bake at 375 degree F for around twenty minutes, or until chicken is cooked through.
  6. Enjoy hot with the now cooked marinade drizzled over your plate.
