Avocado ANYTHING works for me but avocado fries..?! This delicious snack is loaded with 15g of fiber from the avocado itself as well as the coconut flour used as the coating. These avocado fries are Paleo and Keto friendly as they are heavier on the fat and lower on the carbs. Lastly, each serving contains 400mg of potassium making these friends hydrating and good for fluid retention and blood pressure!

Avocado Fries (Gluten-Free, Paleo)

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Servings: 4

Ingredients

2 firm avocados
1/3 cup coconut flour
2 organic eggs, whisked
1/2 cup organic desiccated coconut
1 teaspoon paprika
1 teaspoon onion powder
Pinch good quality salt

Instructions

  1. Pre-heat oven to 350F.
  2. Cut avocado into thick slices/wedges.
  3. In a small mixing bowl combine desiccated coconut, paprika, onion powder and salt.
  4. Arrange three bowls. Place coconut flour in one, eggs in another, and the coconut crumb in the other.
  5. Coat each avocado slice in coconut flour, dip into egg mix and then coat well with coconut crumb. Repeat with all avocado slices.
  6. Arrange coated avocado slices onto a lined baked tray.
  7. Bake in oven for 15 – 20 minutes or until coating is lightly golden and crisp. (Check after 10 mins).
