This vegan avocado green goddess dressing is great on almost every type of salad. The dressing is made from ripe avocado, coconut milk, basil, and vinegar. It is vegan, oil-free, and can be made gluten-free by using tamari in place of soy sauce.

Avocado Green Goddess Dressing (Vegan, Low Carb)
1/2 avocado, remove pit and scoop out of the skin
5 tablespoons coconut milk
3 tablespoons rice wine vinegar
1 tablespoons mirin
1 tablespoon soy sauce
8-12 leaves of fresh basil
salt and pepper to taste
- Combine all ingredients in a blender and blend for 10 seconds or until smooth.
