Avocado Pesto Pasta with Shrimp

Avocado and pesto are two of my favorite things so I decided to merge both. This dish is definitely one of my favorites! Quick and easy dinner for a weeknight.

Melina's twist on pesto is unique as it is delicious! Creamy avocado sauce seasoned with herbs adds a burst of flavor and nutrients to this dish. Avocados themselves are an excellent source of heart healthy monounsaturated fats, specifically oleic acid. This type of fat has been shown to reduce inflammation and have positive effects on cancer genes. They also have more potassium than bananas which has been tied to a reduction in blood pressure. Lowering blood pressure can significantly reduce ones risk for heart attacks, stroke and kidney failure. Spinach is packed with antioxidant nutrients, including vitamins A, C and E which aid in relieving oxidative stress. Shrimp is extremely low in calories but packed with protein. They also provide an entire days worth of selenium, a trace mineral that improves blood flow and enhances immunity.

Avocado Pesto Pasta with Shrimp

Ingredients

1 tablespoon olive oil
1/2 teaspoon salt
3 cups gluten-free pasta of your choice

For the shrimp:
1 teaspoon paprika
1 teaspoon salt + pepper
1 teaspoon basil
1 teaspoon oregano
1 pound fresh, large shrimp

For the pesto:
3 avocados
1 1/2 cup of spinach
1 cup basil
2 garlic cloves
1/3 cup parmesan cheese

Instructions

  1. Boil water + add olive oil and a pinch of salt for the pasta.
  2. Mix all the spices for the shrimp together in a bowl.
  3. Coat shrimp in the spices, and grill until cooked.
  4. For the pesto, combine all the ingredients and blend together until desired consistency.
  5. Once the pasta is cooked al dente, add pesto mixture and top with shrimp.
