I am always on-the-go, so it’s important for me to have a variety of healthy go-to snacks to keep me energized. One of my favorite recipes is this blueberry protein shake for two reasons: 1) the taste 2) the beautiful color. This shake is simple with just a few ingredients, but packs a punch with taste and nutrition. The bee pollen adds a nice touch for texture and additional vitamins and nutrients.

Blueberries are proof that great things come in small sizes. At 80 calories per cup, blueberries are full of dietary fiber, rich in vitamin C and a great source of manganese, which is needed in the development of bones, converting proteins, carbohydrates and fat into energy. Baby spinach, which in comparison to regular spinach is harvested earlier, has smaller leaves and is more tender. Baby spinach contains more than the daily value for vitamin K, allowing proper blood clotting. A 1 cup serving contains 15% daily value of folate, which can prevent neural tube defects in babies and with the high amount of vitamin A, can aid in healthy vision, immune function and bone and skin health.

Ingredients

1 1/2 cups almond milk
1/4 cup blueberries
1/2 cup baby spinach
1 scoop or serving of grass-fed whey protein
1 teaspoon bee pollen

    the blueberry protein smoothie: if one scoop of my collagen has 7 grams protein…how do you figure 18? Truly reading labels of ingredients clarifies the math. But I do put a scoop in my cafe, instead of creamer.
