I am a huge fan of coffee. Because of the non-acidic diet that I follow to curb my LPR, I have kicked my caffeine habit, but still crave the rich, creaminess of a good latte every now and then. This recipe is made with Teeccino, an herbal coffee alternative that is also rich in potassium and inulin (a soluble fiber) so it promotes heart and gut health! I added the coconut oil as a vegan response to the trend of adding butter into coffee for a boost of energizing MCTs (medium chain triglycerides). Same effect, just a plant-based approach!
I make this on cold New York mornings when I am craving my old cup of Joe, or when I need an afternoon pick me up! It’s even great as an after-dinner treat, since there is no caffeine to keep you up all night! The coconut oil also makes it a great energizing pre-workout drink. For anyone trying to give up coffee, I highly recommend trying this recipe!
