Before I embarked on a journey of healing, I used to love making cilantro rice. The combination was just so flavorful and refreshing, especially with the addition of lemon juice. I knew you could make “rice” out of cauliflower, and although many recipes use cooked cauliflower, I knew I wanted to make raw cauliflower rice. Eating raw foods just gives me a better feeling, so I try to come up with different ways of using the same ingredients I use in salads and soups. It was so simple to make, but yet so flavorful and nourishing!

This grain-free recipe is great alternative to traditional rice. Cup per cup, this recipe can save you nearly 35 grams of carbohydrates and 150 calories. With even more fiber than traditional white rice, this cauliflower rice will leave you full and satisfied. Adding garlic, onion and fresh cilantro packs a punch of freshness and flavor without adding calories. This creative and simple recipe gets an A+ in both taste and nutrition!

Ingredients

1 head cauliflower (coarsely chopped)

1/4 red onion

1/2 cup cilantro

1 clove garlic

lemon juice

salt and pepper (to taste)

Instructions

  1. Pulse cauliflower in a food processor or grate until it resembles rice and set aside in a large bowl.
  2. Pulse cilantro, garlic and onion in food processor until finely chopped.
  3. Add mixture to the cauliflower and mix well.
  4. Add lemon juice, salt and pepper (to taste) and serve!

Note: For a different variation, add 1/4 teaspoon cumin.
