These not-overly-sweet cookies are delightfully thin and chewy, yet are strong enough to hold up in a cold glass of milk. While I opt for chocolate chips, carob chips or dried fruit make a great, AIP-friendly mix-in. Or, keep them as a plain, low-sugar cookie!

These chewy chocolate chip cookies may seem like your basic, everyday homemade cookie, however they are actually gluten-free (among other things) and can easily be made to fit an Autoimmune Protocol diet. Meg’s recipe shows that it is possible to indulge in a classic treat, even if your diet is restrictive. Regardless, this homemade cookie recipe can be enjoyed with or without dietary restraints. Chewy Chocolate Chip Cookies

Ingredients

3 tablespoons coconut flour

½ cup + 1 tablespoon tapioca flour/starch

½ cup + 1 tablespoon unrefined cane sugar

¼ cup ghee, room temperature (coconut oil for AIP)

2 tablespoon coconut milk

2 tablespoon maple syrup

1 tablespoon gelatin

1 teaspoon vanilla (alcohol free for AIP)

½ teaspoon baking powder

¼ teaspoon sea salt

¼ cup chocolate chips (omit for AIP)

Instructions

  1. In a bowl, mix everything together thoroughly.
  2. Place 2 tablespoons of dough on a parchment paper lined baking tray and flatten slightly. Repeat to make 12 cookies.
  3. Bake at 180°C (350°F) for 10 minutes.
  4. Allow to cool 5 minutes on the baking tray before handling.
