I LOVE how food can bring us back to happy childhood memories.

As a kid, my sister and I would sit on the couch early on Saturday mornings watching “Teenage Mutant Ninja Turtles,” while my parents slept and would have a huge blow of Cinnamon Toast Crunch Cereal. But being diagnosed with Celiac disease and multiple food allergies as an adult doesn’t allow me to eat that kind of sugary, gluten-laden stuff, so I got inspired by my love for cereal and created this super easy, fun recipe that leaves me feeling uh-mazing! Plus it makes for a great breakfast or snack on the road for long hikes or just an afternoon pick me up. This recipe is sweet, satisfying, crunch, flavorful, quick and easy! You guys are going to LOVE it!

Homemade cereal is such a fun recipe idea! It's lower in total calories and sugar per serving than most store-bought options, and is naturally gluten-free and vegan to boot. Chickpeas boast an excellent nutrient profile being good sources of fiber, protein, heart-healthy monounsaturated fats, and a variety of vitamins and minerals, including folate, iron and manganese.

Chickpea Cinnamon Toast Crunch Cereal

  • Prep Time: 5 minutes
  • Cook Time: 40 minutes
  • Servings: 8

Ingredients

1 bag dried organic garbanzo beans (soaked overnight)  or canned chickpeas
1/2 tablespoon olive oil
2 tablespoons maple syrup
1/2 teaspoon cinnamon
1/8 teaspoon sea salt (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Line a baking sheet with aluminum foil or a Silpat silicone mat.
  3. Drain and rinse the chickpeas in a colander.
  4. Place them on a towel to dry off.
  5. Drizzle with Extra Virgin Olive Oil, maple syrup, cinnamon and optional salt.
  6.  Spread chickpeas on a baking sheet in a single layer.
  7. Bake for approximately 45 minutes or until crispy. Test one, and if it’s still soft, bake for longer.

    Love this idea as I love chickpeas but seriously, 8 servings from one can?! That doesn’t seem very realistic…

      Hi Lottie,
      To get the full 8 servings use the dried chickpeas and soak overnight, not only do they have a better texture but they also have less raffinose the stuff that makes everyone gassy. The canned beans also give a good yield but not the same as dried. Let me know how it turns out for you. Wishing you a blessed day : )
