Every single time my best friend and I get together, we make this guacamole. Without fail. And it is the bomb.com. I know there are a ton of guacamole recipes out there, but this one is the best. My friend’s dad even asked me to Colorado to live with their family so I could make it for them all the time. (I’m not kidding, this actually happened!)

The funny thing about this recipe is, I’ve probably made it 100 times (with no exaggeration) but I’d never written it down until now. It’s so easy, my friend and I always throw things together and then taste as we go. And it always turns out sooo good especially with plantain chips.

Further Food Commentary:

Avocados contain heart healthy fats, a lot of fiber and nearly 20 vitamins and minerals! Additionally the fat in the avocados help your body absorb other nutrients such as Beta-carotene and lutein, so make sure to serve your guacamole with carrots and broccoli (instead of fried chips) to enhance eye health! I personally love adding guacamole on top of my eggs, another food full of lutein! I also love how this recipe just highlights how much flavor plants can contain! Who needs preservatives?

Ingredients

2 ripe avocados (halved and pitted)

1 handful of cherry/grape tomatoes (or one roma/plum tomato, quartered)

1 handful cilantro (about ½ cup loosely packed, chopped)

½ cup onion (chopped, about ¼ medium onion)

½ lime (juice)

1 teaspoon garlic (minced)

½ teaspoon salt (plus more to taste)

½ teaspoon pepper

¼ teaspoon ground chipotle pepper

Instructions

  1. Mash avocado with a fork or potato masher. Leave some chunky bits.
  2. Add remaining ingredients.
  3. Taste and adjust (usually we add some more garlic, salt and pepper).
