I agree with Jaclyn, these cookies will satisfy your chocolate craving, with a lot of added nutritional benefit! These cookies are rich in polyunsaturated fatty acids, which are great for cardiovascular health. These are a great low-sodium and gluten-free choice as well. Each cookie packs a good nutrition punch full of fiber and protein.

Chocolate Chip Cookies (vegan )

Ingredients

1/4 cup of ground flax and chia seed mix
2 tablespoon vegan chocolate chips
2 tablespoons PB2 (powdered peanut butter)
1 medium banana
1 scoop of vanilla protein powder

Instructions

1. Preheat oven to 350 degrees.
1. Mix protein powder, PB2 and banana until a smooth wet mixture is formed.
2. Add in chocolate chips and flax/chia meal mixture.
3. Once fully mixed use a spoon to place a golf ball size of mixture on a baking pan (you can spray baking pan or line with tin foil). This should make 8 cookies.
4. Bake for 7 minutes. Remove from oven and let cool.
