My family absolutely loves this grain-free Keto Chocolate Chip Cake, which is music to my ears since it’s super simple to make, free of added sugar, and packed with healthy fats, protein and Further Food Vanilla Collagen. 

This healthier version of a regular old cake is a win-win. The kids LOVE it, and its not loaded up with tons of extra sugars! There’s only about 3 NET carbs per slice! For me, the best part about making healthier versions of old classic desserts is how they are a little less sweet, which makes them more versatile in my book! Having a cake that’s not as sweet as the usual opens it up to be a delicious breakfast treat, a snack, or a dessert rather than ONLY being a dessert!

My suggestion?  Give it a go. And eat it for breakfast, too — #doctorsorders!

Keto Chocolate Chip Cake

Ingredients

4 eggs

1 cup cashew butter

1/4 cup plain Greek or non-dairy yogurt

1/4 cup Further Food Vanilla Collagen

1/4 cup Sugar-free Powdered Monkfruit Sweetener

1 teaspoon baking soda

1 teaspoon pure vanilla extract

1 cup sugar-free chocolate chips

Instructions

  1. Preheat oven to 350F and spray a 9” round cake pan with avocado or coconut oil or line with parchment.
  2. Put all of the ingredients except chocolate chips in a medium bowl and beat with hand mixer until smooth.
  3. Fold in chocolate chips.
  4. Pour batter into prepared cake pan.
  5. Top with extra chocolate chips if desired.
  6. Bake for 30 minutes.
  7. Enjoy!
