These Chocolate Hazelnut Pancakes are made with Further Food’s Hazelnut Collagen, and they are the perfect quick and easy breakfast to kick start your day! The Hazelnut and chocolate combo is a perfect match- it’s like you’re eating Nutella pancakes. This pancake recipe is also gluten-free, and has an added collagen boost that leaves you with healthy skin, hair and nail benefits!

Chocolate Hazelnut Pancakes (Gluten-free)

Ingredients

1 cup gluten-free all-purpose flour (can substitute regular all-purpose flour)
2 teaspoons baking powder
1 tablespoon sugar of choice
1 scoop Further Food Hazelnut Collagen
1/2-1 tablespoon cacao powder (depending on how chocolatey you want it!)
1 cup milk of choice
1 tablespoon coconut oil, melted and cooled (more for frying pan)
1 egg
Optional toppings: Yogurt, cacao powder, cacao nibs, chocolate tahini drizzle.

Instructions

  1. Start with all room-temperature ingredients.
  2. To a large bowl, add flour, baking powder, sugar, hazelnut collagen, and cacao powder. Whisk to combine.
  3. Add the room-temperature milk, coconut oil, and egg. Stir until just combined. Do not overmix. (The batter is on the thicker side for fluffy pancakes. Thin as desired.)
  4. Heat a skillet to medium low and add oil.
  5. Once hot, scoop batter onto the pan.
  6. Cook with a lid, for about one to two minutes before flipping, to ensure they cook through.
  7. Top as desired. Pictured toppings: yogurt, cacao powder, cacao nibs, and a chocolate tahini drizzle.
