I had one with my coffee and they’re even better the next day. I also shared some with the neighbors (Makes 2 Dozen) and all the kids loved them! ⁣⁣⁣

They are soft,  gluten-free, refined sugar free and dairy-free! Plus, I added Further Food Chocolate Collagen for added protein and chocolately flavor!

These cookies are loaded with heart-healthy fats. Coconut oil is high in healthy saturated fat which can actually help raise "good" cholesterol (HDL cholesterol) in the blood and reduce heart disease. Peanut butter is packed with monosaturated and polyunsaturated fats which can lower "bad" cholesterol (LDL cholesterol). Plus, flavonoids in dark chocolate help to improve blood flow to the heart and brain.

Chocolate Peanut Butter Cookie (Gluten-Free, Dairy-Free)

  • Prep Time: 10 minutes
  • Cook Time: 12 minutes
  • Servings: 24

Ingredients

1 1/2 cup of peanut butter
3/4 cup brown sugar
1/2 cup coconut oil
1/3 cup agave
1 teaspoon vanilla extract
3 eggs (beaten)
4 cups rolled oats
1 scoop Further Food Chocolate Collagen
2 teaspoons of baking soda
1/4  teaspoon of kosher salt
1/4 cup mini dark chocolate

Instructions

  1. Preheat oven to 350°F⁣⁣⁣
  2. Mix the Peanut butter, Brown sugar, Coconut oil, and Agave then add the 3 beaten eggs.
  3. Mix the dry ingredients together and add to the wet.
  4. Make sure to pack the ice cream scoop and space them out on a baking sheet with parchment paper.
  5. Bake for 11-12 minutes. Let them cool a bit 5-10 minutes (the hardest part) before you enjoy
