Further Food Nutritionist Commentary:

Goji berries are low in calories, fat-free, a good source of fiber and a high-antioxidant food. Goji berry benefits include the ability to help fight free radicals that lead to disease, effectively manage your weight and experience better digestion. These versatile and delicious berries contain a wide range of phytonutrients, vitamins and trace minerals, giving them the name “superfood berries” by many health experts.

Chocolate Rose Energy Balls (Vegan)

  • Prep Time:10 Minutes
  • Cook Time:30 Minutes
  • Servings: 12

Ingredients

5 fresh, pitted dates smashed & diced

1 cup almond flour

1/2 cup dark chocolate sunflower seed butter (or favorite nut butter)

1/4 cup pure maple syrup

1/4 cup oat flour

1 tsp cardamom

1 tsp food grade rosewater

1/4 cup goji berries

1/4 cup chopped vegan chocolate chunks

Instructions

  1. Start with a large bowl. Chop up and mash the dates well so they can easily be incorporated. I left a few chunks because I like a more chunky bliss ball.
  2. Add in the almond flour, and chocolate sun butter, mix well.
  3. Add maple syrup, oat flour, cardamom & rosewater. Mix until very well combined.
  4. Fold in the goji berries and chocolate shreds.
  5. Roll into balls, place on a baking sheet & put in the freezer for about 30 minutes.
  6. Store in fridge & ENJOY!
