In addition to providing fiber and water, this salad is an excellent source of vitamin A and also contains vitamin C, a free radical-fighting antioxidant. Thanks to the avocado, tomatoes, and oranges, one serving of this salad contains 1355mg of potassium which helps to build body proteins and promotes normal heart function.

Citrus Avocado and Beet Zoodles Salad

Ingredients

2 cups shredded lettuce/greens of choice

3 small peeled zucchinis, spiralized

3 medium carrots, spiralized

1 medium beet, spiralized

1/2 cup cherry tomatoes, halved

1 whole avocado, ripe

1 small orange, juiced

1 small lime, juiced

Instructions

  1. Put greens in a bowl and top with spiralized vegetables.
  2. Add tomatoes, avocado, orange and lime in half.
  3. Right before serving, start mashing avocado and squeeze orange and lime.
  4. Mix all vegetables and greens with the juice and avocado.
  5. Serve and enjoy!
