I love being able to indulge but not having it be super unhealthy! Pancakes are one of my favorite breakfasts and especially when I have a snow day! These Coconut Chocolate Chip Pancakes made with Further Food Collagen are a perfect start to the day and make me so happy! You could even make it for dessert but either way you will love it.

Coconut Chocolate Chip Pancakes

Ingredients

Pancake ingredients:
3/4 cup chocolate chip pancake mix
1 teaspoon chia seeds
1 teaspoon flax seeds
1/2 cup water or until right consistency
1 teaspoon cinnamon sugar seasoning
1 scoop Further Food Collagen Peptides

Optional: Top with shredded coconut or nut butter.

Instructions

1. Combine all the ingredients in a mixing bowl.
2. Mix until all combined.
3. Heat up a skillet and spray with coconut oil.
4. Pour pancake batter and wait till bubbles appear, then flip.
5. Once both sides are cooked through, plate and repeat with rest of batter, should make about 6 pancakes.
