Preparing this beverage from scratch is a little time consuming, but you can make extra and keep it in the fridge for a couple of days. Store in a glass jar and re-heat gently on the stove. This tea will increase energy while calming the mind. Matcha is chock-filled with antioxidants and calming theanine. The coconut is anti-viral, anti-bacterial, anti-fungal plus our brains love the fat.

Coconut Matcha Latte
2 tablespoons organic unsweetened coconut flakes
2 teaspoons Matcha Tea or Mindful Matcha
1 teaspoon Raw/unpasteurized honey (optional)
2 cups filtered water
- Boil water
- Add coconut flakes to measuring cup
- Add 1/2 cup boiling water to coconut flakes, stir and let sit for a few minutes
- Blend coconut flakes and water, pour through a sieve to remove coconut bits
- Put matcha tea powder in a cup
- Add 1/2 cup boiling water to matcha tea powder, use Matcha whisk (as seen in picture) or small metal whisk to mix
- Stir in honey and enjoy!
