Coconut Matcha Latte

Preparing this beverage from scratch is a little time consuming, but you can make extra and keep it in the fridge for a couple of days. Store in a glass jar and re-heat gently on the stove. This tea will increase energy while calming the mind. Matcha is chock-filled with antioxidants and calming theanine. The coconut is anti-viral, anti-bacterial, anti-fungal plus our brains love the fat.

Matcha -- a ceremonial, traditionally stone-ground Japanese green tea -- is a concentrated source of powerful antioxidant polyphenols linked to an array of health benefits. Epigallocatechin gallete (or EGCG) in particular is three times as prevalent in matcha compared to other green teas, and is being researched for potential ability to protect against certain cancers and heart disease, reduce blood pressure, and fight viruses, among other things. The little bit of fat from the shredded coconut helps your body absorb and utilize these antioxidants, and the touch of honey adds sweetness to bring it all together.

Coconut Matcha Latte

  • Prep Time: 20 minutes
  • Cook Time: 3 - 5 minutes
  • Servings: 2

Ingredients

2 tablespoons organic unsweetened coconut flakes
2 teaspoons Matcha Tea or Mindful Matcha
1 teaspoon Raw/unpasteurized honey (optional)
2 cups filtered water

Instructions

  1. Boil water
  2. Add coconut flakes to measuring cup
  3. Add 1/2 cup boiling water to coconut flakes, stir and let sit for a few minutes
  4. Blend coconut flakes and water, pour through a sieve to remove coconut bits
  5. Put matcha tea powder in a cup
  6. Add 1/2 cup boiling water to matcha tea powder, use Matcha whisk (as seen in picture) or small metal whisk to mix
  7. Stir in honey and enjoy!
