This simple salad dressing is extremely versatile and filled with superfood ingredients – perfect for a sugar detox or anytime!

Creamy Cashew Matcha Dressing (Keto, Dairy-Free)

Ingredients

1/2 cup soaked raw organic cashews, rinsed and drained*
2 tablespoons + 1 teaspoon lemon juice
1/2 cup + 2 tablespoons filtered water
1 teaspoon matcha powder
1 scoop collagen peptides
1/4 teaspoon ground ginger
Himalayan sea salt, to taste

Instructions

  1. Place cashews in a bowl and cover with water. Soak cashews at least 30 minutes or overnight.
  2. When ready to blend, place all ingredients in a high powered blender or Vitamix and blend until smooth and creamy.
  3. Transfer to a glass mason jar or glass container and drizzle on your favorite salad or use as a topping or marinade for chicken, shrimp, fish or tofu.
