Creamy Vegan Dark Chocolate Pudding

I saw this recipe on the Food Network and was eager to create a dairy-free version. Hampton Creek mayo is one of my favorite vegan finds, and it did just the trick to create a creamy, guilt-free chocolate treat!

This creamy, chocolate dessert is made with vegan mayo, non-dairy milks, and vegan dark chocolate making it suitable for vegan, gluten free, or dairy free diets. The use of dark chocolate chips provides flavonoids, which are antioxidants that promote heart health; furthermore, some studies have shown that dark chocolate consumption can even improve mood. Be mindful when eating this sweet treat as one serving contains 30 grams of total fat and 16 grams of saturated fat due to use of coconut oil, vegan mayo, and dark chocolate chips. The Dietary Guidelines for Americans recommend that you consume no more than 10% of calories from saturated fat, which is about 22 grams based on a 2,000 calorie diet.

Creamy Vegan Dark Chocolate Pudding

  • Prep Time: 5 minutes
  • Cook Time: 3 hours (chill time)
  • Servings: 4

Ingredients

1 cup coconut milk
2/3 cup vegan mayonnaise (I used Hampton Creek)
1/4 cup unsweetened almond milk
3 packets granular stevia
1 teaspoon instant coffee
1 cup dairy-free dark chocolate chips
2 teaspoon vanilla extract
fresh berries, for serving

Instructions

1. Combine the milks, mayonnaise, stevia and coffee in a medium saucepan.
2. Whisking, bring to a simmer over medium heat and cook until thickened, 4 to 5 minutes.
3. Remove from the heat, add the chocolate chips and vanilla, and whisk until the chocolate is fully melted.
4. Divide evenly between six 4-ounce mason jars.
5. Chill in the refrigerator until set, about 3 hours.
6. Garnish with berries and serve.
