I like this soup for two reasons; I love soup, and I hate throwing out food that I spent good money on. So before the food gets to the inedible stage,  I will pull from the fridge everything that is close to spoiling and make soup with it.  Soup is a great way to combine healthy foods together, and it’s got some great benefits. It provides water for hydration, easily digestible protein that is necessary for our bodies to function properly, and even a little fiber to keep your waste flowing properly. Plus it’s a great way to cram in a ton of veggies!

We all know that whole grains have great health benefits, including fiber, vitamins and minerals. Black rice (also called forbidden rice) is a lesser-known grain that is especially full of nutritional benefits. A 2010 study showed that there are as many, if not more, cancer-fighting anthocyanins - the pigments that give it the purplish-black color - than the same amount of blueberries. The same pigments, along with the healthy dose of fiber, are also helpful in reducing blood cholesterol. Speaking of color, the brightly-hued peppers are packed with carotenoid pigments like lycopene that help fight off free radicals, plus the offer a healthy dose of immune-supporting vitamins A & C.

Crock Pot Tri-Color Pepper Chicken Sausage Stew

Ingredients

4 cups of organic vegetable broth

½ pound chicken sausage (ground)

½ cup black rice

½ cup quinoa

½ yellow pepper (chopped)

½ red pepper (chopped)

½ orange peppers (chopped)

½ medium onion (chopped)

3 small tomatoes (diced)

2 tablespoons lemon juice

1 tablespoon garlic (minced)

½ tablespoon almond oil

½ teaspoon beef bouillon

½ teaspoon turmeric

½ teaspoon ginger

½ teaspoon cumin

Instructions

  1. Combine all ingredients into a medium to large crock pot, set on cook for 6 hours cook and let the flavors blend.
  2. Enjoy!

Compliment with a slice of Ezekiel sprouted grain bread, buttered (slightly) and sprinkled with garlic and herb seasoning!
