Cucumber Detox Juice aka Liquid Gold

Last summer, I put the word out to friends: I’ll take your overabundance of cukes and turn them into liquid gold. Mother Nature’s cucumbers contain a high percentage of water—which is so important in the heat of summer, but also throughout the year Cucumbers also provide an array of health promoting phytonutrients, flavonoids, and lignin’s. They’re an excellent source of vitamin K, vitamin C, magnesium, biotin, silica (great for your nails!) and vitamin B1.  The optional Further Food Collagen helps to improve gut health, while also strengthening hair and nails.

And as I recently discovered, during times of stress, drinking cucumber juice can bring balance and energy.

Here’s my favorite way to juice this powerhouse into Liquid Gold.

Holli has it right; cucumbers, although 96% water, are nutrition powerhouses. This recipe is also a great idea for those of you who aren't necessarily a fan of plain old water. Hydration is key to every aspect of your health, and it doesn't hurt to squeeze in a few nutrients while you drink up!

Ingredients

8-12 fresh organic cucumbers; skin on
1 whole lemon
1 bunch fresh mint (reserve 2 sprigs)
Optional: one scoop Further Food Collagen

Instructions

1. Scrub cucumbers well and cut into pieces that will fit into your juicer.
2. Run cucumbers, mint and lemon through the juicer. Stir in collagen if using.
3. Garnish with fresh mint.

    Can I make this in the mornings before going to work and drink it hours later like around 10:30am? I don’t want to drink it first thing in the morning. I want to drink it later before lunch or maybe a couple of hours after lunch? Will it still keep its nutrients until then?

    I made my own version of this. I used 3 large cucumbers peeled them sliced them then added 4 large fresh lemons peeled n seeded 1 cup cold water blended then in my blender added 1/2 cup lemon juice. Blended all together came out great. Yummo, even my partner who does not like veggies or lemons said it was different but good.

    This is such a great way to get hydrated when I am sick of drinking water all the time and at the same time, get my body cleansed! I love the idea of adding berries! I will definitely love to try that next time too!

    Wow! I drank this all up. I don’t even like cucumbers, but it must have been the combination of lemon and mint that made this such a delicious juice. It felt so cleansing and healthy. Thanks for this simple recipe!
