Cookies! These Double Chocolate Collagen Cookies are the perfect addition to the lunchbox, especially if you want to win the #bestmomever title. For real though, these gluten-free chocolate chip cookies were a hit in my house! The Further Food Chocolate Collagen adds a ton of chocolately flavor with the health benefits and protein of collagen, its a win-win. The boys loved them!

Almond flour is a great gluten-free flour alternative. It is high in protein, monounsaturated ("healthy") fats and vitamin E. Protein helps build and maintain healthy muscles, monounsaturated fats help improve heart health and vitamin E can help support a healthy immune system. Almond flour is great for people with gluten intolerance but even if you are not sensitive to gluten it is a great addition to any diet.

Double Chocolate Collagen Cookies (Gluten-Free)

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Servings: 24

Ingredients

2.5 cups almond flour
1/4 cup coconut sugar
1/4 organic cane sugar
3 scoops Further Food chocolate collagen peptides
1/2 cup butter
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1-1.5 cups chocolate chips

Instructions

  1. Mix all wet ingredients in a mixer and then add the dry ingredients.
  2. Once combined, fold in the chocolate chips.
  3. Use a tablespoon to scoop the cookies onto a parchment paper-lined baking sheet.
  4. Bake on 350F for 13-15 minutes.
