I am obsessed with oatmeal and bananas. I was playing around in the kitchen and when these turned out crisp and yummy, I knew I had to share!

Rolled oats and bananas are two staple foods that should be on hand for breakfast cereals and snacks and are very fitting to make tasty, guilt free cookies. With this recipe, there is no need for processed ingredients and it satisfies nearly all dietary restrictions! Dairy free. Gluten Free (if you use GF oats). Nut free. Vegan. Vegetarian. The bananas contain potassium, vitamin C and fiber while the rolled oats contribute to one’s daily need of iron and fiber. To add more of your own personal flair, add in vanilla extract, vanilla beans, peanut butter, Nutella, butterscotch, dried cranberries, raisins, chopped nuts, cocoa nibs and/or coconut flakes.

Ingredients

2 ripe bananas

1 cup of old-fashioned rolled oats

Suggested pairings: Stir in a little cinnamon and chopped pecans or chocolate chips or top with your favorite peanut butter and jelly combo!

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl mash bananas.
  3. Stir in oats.
  4. Spoon 1 tablespoon of mixture onto baking tray lined with parchment paper, and repeat until full.
  5. Bake for 20 minutes or until golden brown.

    I tried this recipe out and made a few adjustments–added walnuts, cinnamon and coconut. (I know, not 2 ingredients–but they still came out AMAZING!) Loved them.

    whoa only two ingredients? I gotta try this. Planning to stir flax seeds and chocolate chips into mine for more texture and flavor. Maybe a little vanilla too?
