Easy Low-Sugar Cucumber Apple Sorbet

You have to get creative with our dessert choices when you’re trying to avoid excess sugar.  Fresh fruits are always a great option but preparing them in different and exciting ways becomes a challenge when they seem to be the only option.  Even though I no longer drink alcohol, this recipe was created with a mixologist mindset.  It’s a simple recipe to prepare and all the ingredients are readily available at any grocer.

Homemade desserts are simple, delicious and, best of all, you control what goes into them. With less than 100 calories, 13 grams of sugar (even less if you omit the honey) and zero grams of fat, Ian’s refreshing sorbet is light yet packed with flavor.

Easy Low-Sugar Cucumber Apple Sorbet

Ingredients

1 large Granny Smith apple (about ¾ cup peeled and diced)

1 large cucumber (about ¾ cup peeled, seeded and diced)

1 tablespoon chopped mint leaves

1 ½ tablespoons of lime Juice

2 teaspoons raw honey (optional)

Instructions

  1. Blend all ingredients together.
  2. Pour mixture into ice cube trays to freeze.
  3. Once frozen, blend ice cubes to a slush one more time and freeze in an airtight container. Or, just keep the sorbet in ice cube trays and serve with mineral water.
