Shortly after I read about the healing powers of the plant-based supplement elderberry, a friend gave me this recipe for elderberry gummy bears. Elderberry is known for its immune-boosting powers as well as its ability to fight the flu and colds. When all three of my sons got the flu in one week, I knew it was time to make them! My friend opted to make her own elderberry syrup, but I chose to purchase an organic pre-made version. What could be better than sneaking a superfood into a kid-friendly and kid-approved treat like a gummy bear? While I can’t say whether or not the gummy bears healed the flu, they certainly didn’t hurt. And now that they’re feeling better, my older son usually has a few bears a day. They make for a sweet, reasonably healthy snack with an added boost of illness-fighting elderberry!

Elderberry Gummy Bears with Extra Protein
1/2 cup elderberry syrup
2 Tablespoon raw honey
2 Tablespoons gelatin
2 Tablespoons Further Food Collagen peptides
- Heat all ingredients together.
- Mix well.
- Divide mixture into silicone gummy bear molds.
- Freeze for at least one hour.
- Return to room temperature. (Bears seem to come out of molds better once they are at room temperature.)
