Elderberry Gummy Bears with Extra Protein


Shortly after I read about the healing powers of the plant-based supplement elderberry, a friend gave me this recipe for elderberry gummy bears. Elderberry is known for its immune-boosting powers as well as its ability to fight the flu and colds. When all three of my sons got the flu in one week, I knew it was time to make them! My friend opted to make her own elderberry syrup, but I chose to purchase an organic pre-made version. What could be better than sneaking a superfood into a kid-friendly and kid-approved treat like a gummy bear? While I can’t say whether or not the gummy bears healed the flu, they certainly didn’t hurt. And now that they’re feeling better, my older son usually has a few bears a day. They make for a sweet, reasonably healthy snack with an added boost of illness-fighting elderberry!

A tablespoon of raw honey contains 64 calories, is fat-free, cholesterol-free, and sodium-free with a composition of 80% carbohydrates, 18% water, and 2% vitamins, minerals, and amino acids. It's best to wait for infants to be at least 12 months old before giving them honey as the spores of Clostridium botulinum bacteria can be a cruel toxin to their tiny bodies. As a carbohydrate, honey instantly boosts athletic performance, endurance and reduces muscle fatigue. Rich in anthocyanin antioxidants, elderberries are small round blue-purple berries that are a great sub for more well known berries, such as blueberries or raspberries. Each 100 g of berries contains 73 calories and are a great source of vitamin A and C. Each 100 g carries 36 mg or 60% of recommended daily intake, which helps to boost immunity, heal wounds, fight against cancer and helps with tissue and cartilage repair. ​

Elderberry Gummy Bears with Extra Protein

1/2 cup elderberry syrup
2 Tablespoon raw honey
2 Tablespoons gelatin
2 Tablespoons Further Food Collagen peptides


  1. Heat all ingredients together.
  2. Mix well.
  3. Divide mixture into silicone gummy bear molds.
  4. Freeze for at least one hour.
  5. Return to room temperature. (Bears seem to come out of molds better once they are at room temperature.)
