You MUST try these amazing air “fried” avocado tacos! Avocados are so delicious and filling and the panko crunch really hits the spot if you’re looking for that “deep fried” crunchy taste.

I love love love the idea of an air "fried" vegetable with all of the nutrients from the vegetable with the crunch of a "fried" filling. Avocados are very nutritious as they are packed with Vitamins K and C and potassium and they are also known for their heart-healthy monounsaturated fats! Lastly, avocados are a good source of fiber giving each taco 5g!

“Fried” Avocado Tacos (Dairy-Free, Gluten-Free, Vegan)

  • Prep Time: 20 minutes
  • Cook Time: 25 minutes
  • Servings: 3-4 tacos

Ingredients

1 ripe avocado
1/2 cup of dairy-free yogurt
1 tablespoon of olive oil
1/4 cup of Panko (for gluten-free try Ian’s Gluten-Free Panko)
3-4 corn tortillas

Instructions

  1. Set air-fryer to 392°F or preheat oven to 340°F
  2. Slice a full avocado into chunks.
  3. Combine yogurt with olive oil in a small bowl (in place of egg).
  4. Place Panko in a separate small bowl.
  5. Place avocado chunks individually into the wet-ingredient bowl then into Panko and coat completely.
  6. Layer in single rows and bake for 25 minutes.
  7. Add to tortillas with all your other favorite toppings and enjoy.
