Frozen Yogurt Sundae with Homemade Blackberry Sauce

This frozen yogurt speaks for itself. I live in the deep South where it is over a 100 degrees in the shade with 100% humidity, daily. I needed a cool treat with less fat, hence my version of the yogurt cup was born.

Blackberries are rich in anthocyanins, a powerful phytonutrient that has been shown to protect against oxidative stress and may decrease the effects of Alzheimer’s disease and dementia.  They have also been found to fight against colon cancer. Mint leaves also have one of the highest antioxidant capacities of any food and is potassium, magnesium, calcium and phosphorus rich. Mint leaves can aid indigestion, common cold, irritable bowel syndrome and/or allergies.

Frozen Yogurt Sundae with Homemade Blackberry Sauce

Ingredients

4 (3 ounce) scoops frozen vanilla yogurt

1 pint blackberries (set aside 4 berries for garnish)

1/4 cup sugar*

1 teaspoon cinnamon

1 pinch ground allspice

4 dollops of fat free whipped cream

4 fresh mint leaves


*can substitute stevia or your favorite sweetener (for stevia, reduce the amount to 1-2 tablespoons or to taste)

Instructions

  1. In a small pan over medium heat add berries, sugar and cinnamon.
  2. Using a hand potato masher, smash berries.
  3. Cook berries, stirring often until mixture comes to a boil.
  4. Then cook for an additional five minutes and remove from heat until it cools completely.
  5. Add one scoop of frozen yogurt to an ice cream dish and drizzle blackberry sauce over top.
  6. Top with a dollop of whipped cream and garnish with a fresh black raspberry and mint leaf. Repeat for each serving.
