I’m always looking for ways to sneak nutrients into food that otherwise would have little else to offer besides sheer, indulgent pleasure (which isn’t alway a bad thing, after all it is one of life’s joys)! But if that pleasure also has good fiber and protein, and doesn’t irritate bellies, it makes indulging even sweeter.

Everyone knows that beans are a great source of fiber and naturally low in fat but did you know that they also provide an excellent source of iron, magnesium, potassium and calcium? Beans are also a protein source that is heart healthy and keeps blood sugar levels steady. This recipe is gluten-free which makes brownie eating possible again for those with intolerances. As usual, dessert is dessert and this one’s no different. Indulge, but keep portion size clearly in mind!

Fudgy Black Bean Brownies

Ingredients

1 (15.5 ounce) can black beans (rinsed well and drained)

3 large eggs

¼ cup unsalted butter (melted)

1 ripe banana

¼ cup unsweetened cocoa powder (slightly heaping)

⅛ teaspoon salt

3 teaspoons gluten-free vanilla extract

⅓ cup sugar

½ cup gluten-free semi-sweet chocolate chips

⅓ cup finely chopped walnuts (optional)

Instructions

  1. Preheat oven to 325°F.
  2. Spray a 9-inch baking pan with oil.
  3. Place the black beans, eggs, melted butter, banana, cocoa powder, salt, vanilla extract and sugar in the bowl of a food processor and blend until smooth.
  4. Remove the blade and gently stir in the chocolate chips (and walnuts, if adding).
  5. Transfer mixture to the prepared pan.
  6. Bake the brownies for 40 to 45 minutes, or until toothpick inserted in center comes out clean.
  7. Cool before cutting into squares.

    I’ve tried a couple of different black bean brownie recipes, and this is my favorite yet… they’re super moist and fudgy, and super rich and subtly sweet, so I actually was satisfied with just one!

    I never had heard of black bean brownies until my friend made these…and they were amazing! SO moist yet chewy. They melted in my mouth. I couldn’t believe they were gluten free and used black beans as a healthier alternative. Brilliant!
