While I prefer treats a little less sweet, I needed something rich, chocolatey and impressive to please my in-laws. As tempting as they are fresh out of the oven (who doesn’t like warm, gooey baked goods!?), they’re even better completely cooled! The intensity builds the more they sit out. I’m sure they’re amazing the next day, but brownies never last long enough in my house!

Desserts that aren’t sinful are such a “treat” because they can make anyone on any sort of elimination diet feel “normal.” The cacao is loaded with antioxidants and maple syrup is an ideal sweetener, as it contains many polyphenols which help to fight inflammation! I also love that the protein and fat from the eggs will prevent a sugar spike! Enjoy...albeit in moderation. Dessert is dessert no matter how you slice it.

Fudgy Flourless Brownies

Ingredients

½ cup coconut oil

1 ⅓ cups cacao

¼-¾ cup honey or maple syrup, or ¾-1½ cups sugar (use your sweetener of choice)

1 tablespoon vanilla extract

3 eggs

1/4 teaspoon sea salt

Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt coconut oil over a double boiler.
  3. Stir in cacao and sweetener to taste (the lesser the sugar the more intense the dark chocolate flavor).
  4. Add vanilla.
  5. Remove from heat and stir in eggs, one by one, until batter is smooth.
  6. Pour into a greased glass baking dish, spreading evenly.
  7. Bake for 35 minutes.
