German Potato Salad

I learned this recipe as a child from my German grandmother, and have been making it ever since! It is always a hit, and I am constantly getting special requests for it. This recipe is very simple and never disappoints, plus it is pretty to look at!

Gotta love a healthy potato salad especially during BBQ season! I especially love how herbs and veggies are the highlight here for flavor instead of mayo like so many “typical” potato salads. The heart healthy olive oil used here adds flavor and texture without any additives. Although I don’t recommend olive oil for high heat cooking I love to use it on salads and to drizzle on afterwards in order to enjoy the health benefits and flavors! Lastly the celery and scallions add a nice crunch to make this dish all around satisfying!

German Potato Salad

Ingredients

4 pounds potatoes of choice (boiled and chopped)
7-8 stalks of celery (can add more)
¼ cup chopped parsley
¼ cup chopped scallions
1 cup white vinegar
3 tablespoons extra virgin olive oil
1 tablespoon sea salt
1 tablespoon pepper

Instructions

  1. Place chopped potatoes in a large bowl.
  2. Add celery, parsley and scallions in bowl.
  3. Add the vinegar, olive oil, salt and pepper to the bowl and allow the potato salad to sit in the fridge for at least an hour, though it is best when refrigerated overnight.
  4. Mix thoroughly and enjoy!
