Being a busy working mom of two pre-teens, I am always looking to have quick after school snacks available for my ravenous kids. The recipe had to stick to our real food lifestyle with the flavor of a special treat. These no bake bars come together easily and can be doubled for those ‘hangry’ homework moments!

Further Food Commentary:

This recipe sounds great! It is good that the author specified to use gluten-free oats. All oats are naturally gluten free, but are always contaminated in processing. So only oats that are certified gluten free, are not contaminated and therefore are acceptable for gluten intolerant individuals. All the other ingredients (almond butter and coconut) are naturally gluten free and also so healthy! This is a nice, well rounded snack, in that it contains healthy natural fats, some protein and some carbohydrates too.

Chocolate Oat Bars (gluten free)

Ingredients

1 cup almond butter
1/4 cup honey
1/2 cup coconut oil
2 cups gluten free oats
1 cup shredded unsweetened coconut
1/4 cup sunflower seeds
1 tablespoon flax seeds
1/4 cup cranberries or raisins
1 1/2 cup chocolate chips
1 teaspoon pure vanilla (make sure its gluten free)
1/4 teaspoon sea salt

Instructions

  1. Grease a 9×13 pan with coconut oil or line with parchment.
  2. Over med/low heat melt almond butter, honey, and coconut oil in a sauce pan, stirring well.
  3. Combine the rest of the ingredients into a large bowl.
  4. Once almond butter mixture is melted and smooth pour into the bowl and mix well until the chocolate is melted pour into your prepared pan and cool in the fridge until firm.
  5. Cut into bars and store in the refrigerator or freezer. Enjoy!
