Turmeric contains an agent that may stimulate digestion and limit gas and bloating, called curcumin. Additionally, it may help block the formation of plaque that's thought to lead to Alzheimer's disease and due to its antioxidant properties, it may decrease inflammation. Regular ground cinnamon works just as well as the organic kind, no need to splurge on spices for this meal! Studies have found just 1/2 a teaspoon per day of cinnamon can dramatically decrease LDL cholesterol, triglycerides and total cholesterol levels in those with type 2 diabetes.

Golden Mylk Banana Muffins

Ingredients

2 eggs
3/4 cup of unsweetened sunflower seed butter
1/2 cup of mashed banana
3 tablespoons of softened coconut oil
1 teaspoon of vanilla extract
1/2 teaspoon of warming spice (or pumpkin pie spice)
1/2 teaspoon of turmeric
1/2 teaspoon of cinnamon
1/4 teaspoon of coriander
1/4 teaspoon of sea salt
2 teaspoons of baking powder
1/2 cup of arrowroot powder
2 scoops of Further Food Collagen Peptides

Instructions

  1. Preheat oven to 350 & place liners (or grease) muffin tin.
  2. In a large bowl combine all ingredients up to baking powder & mix well.
  3. Fold in arrowroot powder & collagen peptides until batter forms.
  4. Scoop 3 tablespoons of batter into each tin (you should get 7 muffins).
  5. Bake for 18-20 minutes until golden brown & knife comes out clean*
    *The knife might come out with banana on it, they should be done after 20 minutes!
