Anything with the word “butter” has got my attention! Well this actually NO butter (just pecan butter LOL) but tastes just as sinful without all the processed sugar you would find in your typical “Butter pecan fudge” – and added bonus! These contain GUT HEALING PROPERTIES and tons of protein from Further Food’s Premium Gelatin Powder

Gelatin is an important ingredient in this recipe. First of all, it helps to create a nice creamy texture that we all love about fudge. In addition, gelatin contains a lot of good-for-you benefits for the entire body. Gelatin, like collagen, helps to promote youthful skin, stronger nails, and as Bethany says, gelatin can help heal the gut lining.

Healthy Butter Pecan Fudge

Ingredients

Bottom Layer:
2-4 cups sugar free chocolate chips

Fudge Layer:
2 cups steamed cauliflower rice (measure after steaming)
1/2 cup boiling water
1/2 cup of pecan butter
4 tablespoons honey (keto / candida diets omit)
6 scoops Further Food Premium Gelatin Powder

Instructions

  1. Melt chocolate chips in microwave in 15 second increments
  2. Pour melted chocolate into mold / dish and freeze while making the fudge layer.
  3. Puree all fudge ingredients well (be sure cauliflower is still hot / warm when doing this to activate the gelatin) and pour over solid chocolate. Refrigerate 2 hours or until fudge has set. Option to top with pecans and chocolate drizzle.
